It seems like most people think that since I am in great shape and I am a personal trainer that I must eat super healthy all the time.  I actuality, I do.  But there is no reason that I can’t enjoy some of my favorite childhood foods such as pizza, burgers and chicken nuggets.  After all, I lived off of those three foods alone (well, and mac n’ cheese with hotdogs) for about 18 years of life.

Now, I not only eat healthy, I eat like an adult.  I enjoy eating whole foods that give me the fuel to work, write, train, play with my dog, let loose on the weekends and spend time cooking with Lindsay of course.  On the menu tonight:

Baked Spicy Pecan Chicken Nuggets

  • 2 chicken breasts, cut into 1″ cubes
  • 1 egg
  • 1/2c milk
  • 1/2c crushed pecans
  • 1/2c Ezekial cereal
  • 2 tbsp. parmesan
  • 1/4 tsp. chili powder
  • 1/4 tsp. cayenne
  • 1/2 tsp. garlic powder

How to Prepare

Have your chicken cut up into cubes so your ready to go.  I like to cut the chicken while it is still somewhat frozen to make it easier.  Do whatever works best for you.

Grass fed animal flesh

Preheat the cooking box to 375° and cover a baking sheet with foil and lightly oil.  I like to use coconut oil but EVOO works just as well.

Combine all the dry ingredients together in a baggie and shake it like it owes you money.  Then shake it like a polaroid picture.  Not that much!  Calm down killer.  I guess all those deadlifts are really paying off…

The prep

Then dump all that business in it’s own bowl.

So hungry...

In another bowl, whisk the egg and milk.  Dump the chicken chunks into the egg mixture until it is coated then slosh it in the dry business one at a time and place on the baking sheet.

Cook for about 20 minutes and prep your favorite vegetable side dish while you are waiting.  Tonight I sauteed some fresh spinach with a little lemon, EVOO and garlic powder.

Dipping Sauces

  • Ketchup (or catsup, whatever you call it)
  • Honey and Dijon Mustard mixture

    Life is good.

Enjoy with a glass of wine and a beautiful woman and this might just be the best meal you ever have! Dessert is up to you.
